  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together sugar and butter.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in apple cider and vanilla extract.
  6. Sift in the dry ingredients and mix until combined.
  7. Drop tablespoonfuls of dough onto a baking sheet.
  8. Bake for 10-12 minutes and allow to cool.
  9. Once cooled, fill half of the cookies with caramel sauce and top with another cookie.

Notes

  • For best flavor, use fresh apple cider.
  • You can substitute caramel sauce with chocolate ganache if desired.
