Apple Cider Whoopie Pie Cookies with Caramel

Deliciously soft apple cider whoopie pie cookies filled with a rich caramel surprise.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup apple cider
  • 1 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
  4. Add the eggs one at a time, then stir in the vanilla extract and apple cider.
  5. Gradually mix in the dry ingredients until just combined.
  6. Drop spoonfuls of the dough onto baking sheets.
  7. Bake for 10-12 minutes, or until edges are golden.
  8. Let cool, then sandwich with caramel sauce in between two cookies.

Notes

  • For best results, chill the dough before baking.
  • Use homemade caramel for a richer flavor.
