Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and apple pie spice.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the apple cider, mixing until just combined.
  6. In a separate bowl, beat together the cream cheese, powdered sugar, and lemon juice until smooth.
  7. Drop spoonfuls of cookie dough onto a baking sheet, making a small indentation in the center of each cookie.
