African Chicken Curry – Kuku Paka

A delightful and creamy Kenyan curry that showcases tender chicken in a rich coconut sauce.

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 pound chicken thighs, boneless and skinless
  • 1 can (400ml) coconut milk
  • 1 tablespoon lime juice
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add chopped onion, garlic, and ginger; sauté until softened.
  3. Stir in curry powder, cumin, and coriander; cook for 1 minute.
  4. Add chicken thighs to the skillet; cook until browned.
  5. Pour in coconut milk and bring to a simmer.
  6. Reduce heat and let simmer for 20 minutes until chicken is cooked through.
  7. Stir in lime juice and season with salt.
  8. Garnish with fresh cilantro before serving.
